Banana Bread Mini Loaf with Streusel Topping
I started making mini bread loafs for friends, neighbors and my family several years ago. I love how they make a edible cute gift or you can pop a few in the freezer for later.
I hate throwing out food, especially a couple of ripe bananas and it seems like that is a every other week thing around my house. This is an easy recipe, the batter can all be made in one bowl and hand mixed.
In a large bowl mix together the ingredients listed below until combined. Batter will be lumpy.
3 ripe bananas, mashed
1 1/2 Cup of Flour
2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
2/3 Cup granulated sugar
3/4 Cup rolled oats
1/4 Cup Vegetable Oil
2 large eggs
1/2 Cup Milk
1/4 tsp Vanilla Extract
In a separate small bowl mix together the Streusel topping.
1/2 cup granulated sugar
2 Tbsp. brown sugar
1 Tbsp. white flour
2 Tbsp. butter, soften/melted
1 tsp ground cinnamon
In a mini loaf pan lightly greased with spray cooking oil fill batter to about half way. Sprinkle streusel topping on top of batter.
Bake at 350 degrees for 25-30 minutes or until cooked thoroughly and golden brown. Remove from oven and let cool 10-15 minutes before removing from pan. Keep sealed in container or serve immediately.
Enjoy! You may never be able to eat "plain" banana bread again.
